Mara Mia friendly wine dinner at Bo Innovation HK

Bo Innovation is a ground breaking Chinese fine-dining restaurant, serving ‘X-Treme Chinese’ cuisine,

Mara Mia, Tenuta Mara

with executive chef Alvin Leung known around the world for his “sense of adventure, humour and rock and roll”.

The Michelin starred restaurant Bo innovation is the 65th ranked restaurant in the 2010 San Pellegrino’s Best Restaurants in the World list.

Mara Mia staff was curious to discover the research that the chef Alvin made to design his dishes and … above all they were curious to find out how this food can match Mara Mia wine! So on Thursday November 10 we decided to have a dinner there

Mara Mia is a fine biodynamic wine made in the winery Tenuta Mara (Romagna, Italy) with Sangiovese grapes… and passion!

There are three menu choices at Bo Innovation. We chose the Chef’s table menu … with some additions!

We didn’t start drinking Mara Mia wine from the beginning but we started with Champagne Bollinger “La Grande Anneé”, 2000

 

 

OYSTER
spring onion, lime, ginger snow, “xiaoshing” seaweed jelly

CAVIAR
smoked quail egg, crispy taro

We finished the first bottle of champagne that we really appreciated

The next was “Bollinger RD 1997″that, as the Tenuta Mara agronomist said, was without any balance, wine overripe fruit to start and citrus notes at the end…

SABA

HAIRY CRAB

We finally opened  Mara Mia 2010… an amazing bottle in a magnum format

This wine is really a good match with Alvin’s dishes!

BAMBOO
bamboo shoot, foie gras, “zhou ye qing” liquor miso, indian lettuce stem pickle, bamboo pith

TOMATO
pat chun vinegar, fermented chinese olives “lam kok”

We complete the dinner with the 2 special desserts SANDALWOOD (chinese almonds, cherry berry compote) and SHUI JING FANG (crispy milk, banana foam)

A dinner at Bo Innovation restaurant is always a nice experience but with Mara Mia wine was even better!
